This Easter lunch also marks the launch of the auberge’s spring menu, designed around fresh, local and seasonal products, with a contemporary yet generous approach.

Green asparagus from Provence, prepared in a Sbrinz crust with wild garlic gribiche, sets the tone with elegance. The cuttlefish carbonara, paired with Valais bacon and parmesan, brings a richer and more indulgent note.

In this seasonal interpretation, roasted Bresse cockerel is served with morels, white asparagus and subtle notes of hay and pine, adding depth and character. Arctic char, accompanied by green asparagus, preserved lemon and elderflower, expresses both freshness and finesse. The risotto served inside an artichoke, enhanced with preserved lemon and parmesan, offers a refined vegetarian alternative. Finally, Swiss milk-fed lamb, prepared as a stew with peas, oregano butter, Valais bacon and roasted new potatoes, fully embodies the spirit of the season.
To finish, a delicate yet indulgent dessert combines light meringues with rich Gruyère double cream, while rhubarb and strawberries bring a tangy freshness, enhanced by floral elderflower notes.
